种子油 (omega-6) 有毒、致炎、致胖

真相

缺人体证据. PUFA 替代饱和脂肪反而降 CHD (Mozaffarian 2010); 食欲假说只到小鼠 (Alvheim 2012). 真问题是油炸 + 包装的食物形态, 不是分子.

先说心血管 — 这是 omega-6 争论里证据最多的地方, 结论可能和两派都不完全一样.

Replacing saturated fat with polyunsaturated fat reduced CHD events ~19% (RR 0.81, 95% CI 0.70-0.95), ~10% per 5% energy.

Cochrane Database of Systematic Reviews, (11), CD011094. Increasing omega-6 fats made little or no difference to cardiovascular events or mortality (low-certainty evidence), with a possible small reduction in myocardial infarction.
